CUISINE

Panacea Retreat has a dedicated kitchen team trained by Chef Alessandro Verdenelli of KX Health Club in London. The menus have been designed with focus on simplicity, freshness of produce, and the health benefits of the ingredients, without sacrificing flavours.

The team also offers an impressive choice of pre and post work-out sports drinks, including protein or nutrition shakes, detox and power juices, as well as many smoothies made from fresh fruits and vegetables.

Our guests have a choice of two private dining areas, either the open plan living rooms, or al fresco in the poolside Sala. Both venues offers stunning views over Bophut Beach and Big Buddha Bay.

Panacea Retreat chef Alessandro Verdenelli

ALESSANDRO VERDENELLI

A native of Rome, he joined the culinary world at a young age at his uncle’s restaurant.

After finishing the Professional Culinary School in Rome with great results, he strengthened his knowledge of Italian culinary tradition and decided to learn more in international and Japanese cuisine.

In 2004 he moved to London and joined the team at the Neal Street Restaurant with Antonio Carluccio; the following year he moved to Cecconi’s in Mayfair where he became the Sous Chef after only three years.

In the summer of 2008 he begins his KX adventure dedicating all his passion, knowledge and expertise to deliver outstanding service and superior quality. Working with a select choice of organic ingredients he specialized in healthy kitchen without compromising on great taste.

Strong with his Mediterranean background he combines Oriental tradition and exotic ingredients to obtain the maximum results. An evolving and innovative menu that goes with any request: is it a diet, an intensive training, a working lunch or an interesting dinner out.

Since 2011 Alessandro has been involved in creating the culinary concept for Panacea Retreat, recruiting and training the team, sourcing the best suppliers and fine-tuning the menu.
